Full-of-Veggies Chili
1 large sweet onion, diced
1 large green bell pepper, diced
2 garlic cloves, minced
2 tablespoons vegetable oil
1 (12-ounce) package ground beef substitute
1 large zucchini, diced
1 (11-ounce) can whole kernel corn, undrained
2 (15-ounce) cans no-salt-added tomato sauce
2 (10-ounce) cans diced tomato and green chilies, undrained
1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can pinto beans, rinsed and drained
1 teaspoon sugar
1 (1 3/4-ounce) envelope Texas-style chili seasoning mix
- Saute first 3
ingredients in hot oil in a large stockpot over medium-high
heat 5 minutes or until tender. Stir in beef substitute and
remaining ingredients. Bring to a boil; reduce heat. Simmer,
uncovered, stirring often, 20 minutes.
Makes about 4 quarts.
Note: Chili may be frozen
up to 3 months, if desired.

Hot cooked rice
Combine first 7 ingredients in 9x12" dish. Wrap pea pods around
pineapple chunks. Alternately thread SPAM cubes, pineapple chunks,
and bell pepper pieces on eight skewers. Place in dish with marinade.
Cover and marinade 2 hours, turning occasionally. Grill kabobs over
medium-hot coals 10 minutes, turning occasionally. Or, broil 5" from
heat source 8-10 minutes, turning occasionally. Serve with hot cooked
rice.

A splash of Tabasco spices up these tasty appetizers.
Combine first 5 ingredients in food processor or blender until
smooth.
Add 2 teaspoons of this filling to the middle of a wonton wrapper,
fold in
half over the mixture, and seal edges.
Heat oil in a large skillet over medium heat.
Place wontons in skillet and cook just until lightly browned on
both sides.
Gradually pour water into skillet; cover immediately.
Allow to steam 1 minute.
Drain wontons with slotted spoon.
Serve immediately.
Yield: 12 servings, approximately 1 cup mixture, 24 wontons
